沙门氏菌快速检测技术研究进展

Research Progress on the Rapid Detection of Salmonella

  • 摘要: 沙门氏菌是食品中最常见的致病菌,是导致食物中毒的重要病原菌之一,严重危害人类的健康安全和食品安全。由于其血清型繁多,传统方法检测起来耗时耗力。近年来,随着生物学的发展,新的检测技术层出不穷,尤其是分子生物学检测技术和免疫学检测技术。该文介绍了近年来检测食品中沙门氏菌技术的研究进展以及其应用前景。

     

    Abstract: Salmonella is the most common pathogenic bacteria in food, which can cause bromatoxism and bring about hazard on human. There is a problem of timeconsuming on the conventional detection approach, resulting from the various serotypes in salmonella. In recent years, a growing of new detection methods emerge in endlessly, particularly those on the molecular biology and immunology with the development of biological technology. This article provides the development and application on the rapid detection of salmonella in food.
